The ideal amount of meat per person is 1/2 pound. This means that if there are 20 guests at your party, you should arrange for at least 10 pounds of meat. Planning for 3/4 pound of meat per person can account for the possibility that some guests might indulge in seconds or thirds.
Plan for approximately 1/2 cup of each side dish per person. Guests tend to load up more on their favorite sides, so having a little extra can't hurt.
